Vegan Biscuits

These pretty biscuits are great for gifts or simply to enjoy at home. I made these with my youngest son and it’s a really nice way for children to get confident and creative in the kitchen. We halved the dough so we could each make whatever shapes we wanted to.

It’s a simple shortbread recipe for the biscuit base, you just need a little creativity and time to pipe some icing on top. These biscuits are crunchy, tasty, cute and so easy to make. You’ll only need 3 ingredients, (plus the icing to top), so they are super quick, simple and low cost.

I used some cookie cutters that have a slight indentation so it’s easier to follow the pattern when it comes to the piping, alternatively you could simply use a round cutter and create your own personal designs.

I used a small packet of a selection of icing tubes and they worked perfectly for a simple design.


Ingredients

100g Caster sugar

200g Vegan spread

300g Plain flour

Tubes of coloured icing ready to pipe to decorate


Method

  • Cream the sugar and butter together

  • Add the flour and mix together until a ball is formed

  • Pop in the fridge for 20 minutes

  • Once the biscuit mixture has cooled in the fridge simply roll and cut out your chosen biscuit shapes using cookie cutters (you want the biscuits to be as thick as the size of a pound coin or just a litter thicker)

  • Bake at 180 C for around 10 minutes or until golden.

  • Pop them onto a cooling rack

  • Once cooled it’s time to get creative with the icing.

These are so much healthier than shop bought biscuits and they taste so much better as well as being fun to make as well.
