This eggnog is the perfect Christmas drink to enjoy with family and friends for your Christmas party or enjoy snuggled up in a blanket on your own.

I’ve tried to make this a little healthier by using some soaked cashew nuts for a natural creaminess (with a little added goodness) and I’ve used dates for a natural sugar sweetness. Feel free to taste the eggnog after you’ve made it and add a little maple syrup if it’s not sweet enough for your liking.

TOP TIPS:

  • Add a splash of rum, amaretto or whisky for that boozy and warming kick.

  • You can also use this warm with a shot of espresso for that winter warmer

  • Add some into your porridge or overnight oats for a nice Christmas twist

This eggnog will definitely get you in the Christmas spirit…and nobody will even guess it’s a healthier version and vegan. Happy Christmas x


Ingredients

50g cashew nuts

50g dates - pitted and medjool if you can as they are plumper

500ml almond milk

400ml tin coconut cream (full fat)

1/2 tsp cinnamon

1/4 tsp nutmeg

OPTIONAL

A splash of rum, whisky or amaretto

Vegan whipped cream to decorate on top

Half a love vegan bar - cut lengthways to decorate


Method

  • Place the cashew nuts and dates in a bowl of hot water and soak for 20 minutes to soften

  • Drain the cashew and dates after 20 minutes and add them to the blender with a splash of the almond milk and blend until you have a smooth paste.

  • Add the rest of the almond milk, coconut cream, spices and alcohol (if using) into a blender

  • Blend on high for 1 minute until smooth and creamy.

  • Place in the fridge to chill

  • Pour the eggnog into a glass

  • Add some vegan cream and place the vegan bar into the cream

  • Now add a sprinkle of cinnamon and sprinkle a pinch of the other half of the bar on top of the cream too if desired.

If you want to drink this cold straight away then add some ice cubes to the blender before blending. You can also enjoy this warm by heating gently in a pan on the hob or on in the microwave.
