Meatless Loaf

This meatless loaf is perfect to enjoy for a Sunday roast, special occasion or simply for a mid-week meal, as its really quite easy to make, especially when you’ve made it a few times and get the hang of it.
Ingredients
3 tbsp flax seeds mixed with 6 tbsp water (this is your flax ‘egg’)
2 tbsp oil
1 medium red onion, finely diced
1 courgette, grated
3 cloves garlic, minced
200g button mushrooms, finely chopped
1 tbsp mixed herbs
250g cooked rice (boiled or from a packet)
180g mashed potato
100g oat flour (oats blended to a powder)
breadcrumbs (2 slices of bread - crusts removed and preferably slate - blended to crumbs)
80g walnuts, chopped
1/2 tin tomatoes (oe 3 tbsp tomato puree)
2 tbsp soy sauce
1 tsp salt
Method
Pre heat oven to 180C
Make the flax ‘egg; and leave to thicken for 5-10 minutes
Line a bread/loaf tin with baking paper
In a large frying pan heat the oil and gently fry the onion for 5 minutes
Add the courgette and garlic and continue to for for another 5 minutes
Add the mushrooms and turn up the heat and cook until the mushrooms have released the liquid and reduced in size.
Add the herbs and mix through until combined
Pour the mixture into a large mixing bowl
Add the rice, potato, oat flour and bread crumbs and mix really well until combined
Add the walnuts tomatoes, soy sauce and sat and mix again until combined
Place the mixture into the loaf tin and press down well
Bake for 25 minutes and check if its cooked by pressing the top and if its very squishy leave it for another 5 -10 minutes (cooking will depend on the size of your loaf tin)
Once it’s browned on top and cooked remove from the oven and leave to cool sightly.
Serve with some greens and roast potatoes.
