Almond butter stuffed dates

This is a really simple recipe for when you get that sugar craving but you don’t want to reach out for processed sugar. Although dates contain quite a few calories they are also packed with vitamins, fibre and are a good source of iron, making them a healthy food choice. When you add almond butter which is high in protein and healthy fats the nutritional values are increased. I love to enjoy these as a snack or sometimes as a simple breakfast with an oat milk latte.

They are so simple do make, just make sure that you buy medjool dates as they are so much sweeter and softer. If you cant get your hands on medjool dates then you may need to soak the dates for a few minutes to soften them.


Ingredients

5 Medjool dates

5 Teaspoons almond butter

Small handful of flakes almonds and dried cranberries for decoration

Optional; melted chocolate to drizzle on top (on it for 100% naturally sweetened)

Method

  • Slice/tear the dates in half and remove the stone

  • Using your finger press down the hole in the centre of each half to make a little more room for the almond butter.

  • Use 1 teaspoon of almond butter per date (so 1/4 teaspoon per half).

  • If you’re adding a drizzle of melted chocolate then simply melt and drizzle

  • Add a few almond flakes and dried cranberries to decorate.

They will keep for around a week, possibly longer (mine don’t last that long) in a sealed container in the fridge.
