Big and chunky spicy soup

This soup reminds me of a tin of ‘big soup’ Don’t get me wrong I love a smooth soup but when it’s cold outside then a warming bowl of chunky soup goes down really well!
If you prefer a smooth and creamy soup the you can simply blend when it’s cooked and cooled down, add a dollop of vegan coconut cream for added indulgence at the end of cooking.
Ingredients
1 onion
2 leeks
1 tsp chilli flakes
good pinch cayenne pepper
1 tbsp mixed spice
1 clove garlic (crushed)
1 cup water
2 carrots - peeled and chopped
1 large potato - peeled and chopped
Salt and pepper to taste
Method
slice the onion and gently fry in a small of rapeseed oil for 5 minutes
Chop the leeks and add them to the pan and continue to gently fry until softened
Add the chilli flakes, cayenne pepper, mixed spice and garlic and stir until the spices have covered the onion and leeks.
Add a cup of water and stir until the spices have dissolved and you have a thick sauce
Add the carrots and potato chunks and then fill the pan with enough water so that the carrots and potatoes are completely immersed in water
Gently boil for around 20 minutes or until the carrots and potato are soft.
Add more water as the pan boils if needed so that the carrots and potatoes are always covered
Once the potatoes and carrots are cooked and the soup has thickened add some salt and pepper
