No-bake caramel & oats bars

If you’re looking for buttery, caramel heaven then these are just the bars for you. They are exactly as you would imagine and really hit that sweet spot when cravings call.
They are still relatively healthy compared to regular shop bought caramel treats but the do contain a small amount of coconut sugar but it really does add that caramel yumminess, you may leave this out if you like however, they won’t be as sweet…but still delicious.
The base is a glaze that I use a lot and the cup measurements work really well, add as much or as little as you like
Top Tip
You may find you have left overs of the glaze topping, simply save it in the fridge and use for drizzling over ice-cream, porridge or whatever else takes your fancy.
Ingredients
Base
100g oats (can be GF)
50g coconut sugar
65g plant based butter
1 tbsp chia seeds
Middle
80g dates
100g peanut butter
Top
1/4 cup cacao powder
1/4 cup maple syrup
1 tbsp coconut oil (melted)
Method
Part One
Melt the butter and stir in the sugar until it has dissolved and you no longer have any grains
Add the oats and chia seeds and stir in well until the oats and seeds are coated
Press the oat base into a mould or into a small lined tin
Part Two
Melt the peanut butter and add the dates
Mash them together using a fork or masher (if you have a small blender you can bend the in that you as the ingredients are such a small quantity they won’t blend in a large blender)
Add the middle to the base and chill whilst you prepare the topping
Part Three
Combine all the topping ingredients together in a bowl and whisk until it’s lump free
Pour over the middle and pop in the fridge for an hour to set (add some oats to the top just before it sets completely if you wish to decorate your bars)
Any left over drizzle may be stored in the fridge for around a week.
