Easy Chocolate Granola

Start mornings the best way by enjoying a healthy and nutritious breakfast. Making a large batch of granola at the weekend can help with breakfast inspiration for the week ahead. Granola can be enjoyed on it’s own with some nut based milk, topped over porridge or sprinkled over vegan yogurt to create a delicious breakfast pot, it is also great for snacking throughout the day.
I have two recipes here, the first is a basic chocolate granola and the second option is to make a more indulgent granola. (Simply adding extra ingredients at the end of making the first basic batch).
This is so lovely to make and will leave the kitchen smelling like a sweet bakery
Ingredients (Basic Recipe)
300 g rolled oats (can be gluten free)
100 g seeds (sunflower pumpkin)
2 tbsp chia seeds
125 ml maple syrup
2 tbsp cacao powder
Method
Preheat the oven to 180 C
Mix all of the ingredients together in a large bowl ensuring that the maple syrup has coated all of the ingredients.
You can use your hands to press the mixture into small balls to create larger clumps of granola if you wish or simply leave them as they are in the mixing bowl
Add the mixture to a lined baking tray and bake for about 20 minutes
Keep an eye on the mixture to check that it doesn’t burn. Baking times can be slightly longer/shorter depending on how big the baking tray is and if your granola has big clumps or if you’ve gone for a finer batch.
To make it extra indulgent
Extra Ingredients
2 Love Vegan bars (chopped) or 1 bag of Love Vegan bites
100 g dried berries (cranberries, cherries, blueberries)
50 g coconut flakes
50 g mixed nuts (walnuts, pecans, sliced almonds)
50 g dark chocolate
Method
Follow the instructions for the basic granola recipe but only cook for 15 MINS
Remove the baking tray from the oven and add the remaining ingredients to the baking tray.
Mix the remaining ingredients together in the baking tray until the dark chocolate has melted and bake for another 5 mins. Keep an eye on the mixture as the berries and vegan chunks can brown very quickly.
Enjoy with some coconut yogurt and berries, with some cold plant-based milk, sprinkled on top of warm oats or as a tasty snack.
