Easy Vegan Kebab Sticks

These kebabs are perfect for vegan and vegetarians but meat eaters will also LOVE them. Great on the BBQ or cooked in the oven and served with some spicy rice and salad, everyone will be happy with this quick and easy meal.
I’ve used firm tofu and marinated it in a homemade soy and ginger sauce -such a lovely combination. Its best to marinate the tofu over night but if you don’t have that long then I recommend at least half an hour. If you cant find firm tofu then you’ll need to squeeze the liquid from the tofu block. You can do this simply by wrapping the tofu in a clean tea towel and placing the tofu block under some weight (I usually use a chopping board and a couple of cook books) after about 20 minutes the tea towel will have absorbed the liquid.

Ingredients
1 block of firm tofu cut into chunks (no need to press to remove the water if you buy the firm tofu)
(For the marinade sauce)
Mix together:
4 tablespoons soy sauce (low salt if you can)
2 tablespoons rice vinegar
1 tablespoon maple syrup
1 grated garlic clove
1 tablespoon grated ginger
2 tablespoons rapeseed or vegetable oil
(Veggies for the kebab sticks)
Chopped courgette
Peppers cut into chunks
Baby tomatoes
Red onion
(Or use any veggies that you have in the fridge)
Method
Put the tofu chunks into a shallow dish and pour the marinade on top. Leave over night in the fridge or for as long as you can (at least 20-30 minutes)
Place the tofu on a kebab stock with your favourite veggies
BBQ or oven bake (preheated oven 180C) for around 15-20 minutes or until browned.
Serve with spicy rice and your favourite sides
