Energise smoothie

Full of nutritious ingredients such as protein and good fats and loaded with vitamins, omega-3 and fibre you can be sure you’re getting a good healthy boost


Ingredients

Half cup pineapple (or about 4 x rings from a tin)

Half cup frozen berries (pick your fave)

1 avocado

2 large handfuls spinach (or use 2 x frozen individual portions)

2 tbsp flax seed

2 cups coconut milk

Optional 2 x dates for natural sweetness

Vegan yogurt and a couple of raspberries

Method

  • If you have a high speed blender then simply add all of above and whizz up until smooth

  • Divide into 2 large glasses and top with vegan yogurt and some crushed raspberries or other fruit that you enjoy to eat.

If your blender is not high speed

  • If your blender is not so powerful add the spinach with the coconut milk FIRST and blend them together until the liquid becomes as smooth as possible, this way you won’t get lots of green pieces of spinach and the smoothie will look much more appetising.

  • Add the rest of the ingredients, blend once again until smooth

  • Divide between 2 large glasses and top with vegan yogurt and some crushed raspberries or other fruit that you enjoy to eat.
