Protein Pancakes

Fluffy gluten free and vegan friendly pancakes, made using only natural ingredients and sugars so you can be sure they are super healthy, as well as totally delicious. Loaded with our high protein Love Vegan bite, peanut butter, strawberries, banana and sprinkled with the super food chia seeds, making this a protein fuelled breakfast, to keep your energy levels high until your next meal. Perfect pre or post exercise too to help refuel energy levels and build muscle.
Ingredients
Dry ingredients
130g buckwheat flour
40g gluten free oats (blended to a fine powder)
2 tbsp coconut sugar
2 tbsp vegan protein powder (sugar free if possible to keep the recipe naturally sweetened)
1 tsp baking powder
1/2 tsp cinnamon
pinch salt
1 tbsp flax seed powder
Wet ingredients
1 tin of coconut milk
To top (enough for 2 people, double quantities for more people)
2x Love Vegan morello cherry protein bar
1 banana
8 strawberries
2 tablespoons peanut butter
Chia seeds to sprinkle
Sprinkle of chocolate drops (optional but good)
Method
Place the dry ingredients into a large bowl
Add the coconut milk and mix together
Leave to rest for 5-10 minutes (otherwise the pancakes will be tough)
Whilst resting prepare the topping
Chop the Love Vegan bar into slices, slice the strawberries and banana and warm the peanut butter to make it runny
After the pancake mixture has rested simply spoon or ladle small sized rounds into a large frying pan, I usually manage to fit 4 pancakes per frying pan. If you use non-stick you don’t need any oil, if not them pop a teaspoon of oil in prier to the pancake mixture.
Fry for a couple of minutes each side
Once cooked keep warm whilst you make the rest
Load with all the toppings and drizzle with runny, warm peanut butter
