I have a lovely healthy cake recipe for you to have a go. It’s a really simple cake that is secretly healthy. It is made with almond flour to make it flour-less and sweetened using a sweetener so it’s lower in calories however sugar can be used if you prefer. Enjoy with a delicious matcha latte for a nice healthy snack.
Surprisingly this cake contains no egg, flour or sugar but it tastes AMAZING!
Ingredients
(Cupcake)
2 tbsp chia seeds (works as an egg substitute) covered with 4 tbsp hot water and soaked for 10 mins
1 cup ground almonds (almond flour)
1/4 cup cacao powder
1 tsp Baking powder
Pinch salt
60ml Plant based milk
3/5 tbsp sweetener
1 tsp vanilla
(Chocolate topping ingredients)
50g Dark chocolate (semi sweet)
1 Tin coconut milk (only the solid cream will work so make sure it’s not watery-I use Aldi coconut cream as this has solid cream on top) **
Love Vegan bar (cut into star shapes) or Love Vegan heart bites for decoration
**use the coconut cream from the top of a tin of coconut milk - you don’t want the coconut water, only the cream topping. (It is easier to remove if the tin has been chilled in the fridge)
Method
Simply mix all of the ingredients together in a large bowl and fill cupcake cases with the mixture.
The mixture will be quite thick in texture
Bake for 15-20 mins 180C in a preheated oven
Leave to cool on a wire rack
Whilst the cakes are baking you can make the topping.
Simply add the topping ingredients to a small pan and gently heat until combined. Place the mixture in a small bowl and pop into the fridge until cooled (this will be completely set and solid)
Using a whisk mix the solid chocolate and coconut mixture and it will begin to soften and go fluffy.
Once it’s nice and fluffy you can top the cake.
