Keto Key Lime Pie Cake

For anyone following a Keto Diet or simply looking to reduce their sugar and carb intake then these cake might just be for you. They are quite dense in comparison to regular cupcakes because they are made using ground almonds but they do hot that sweet spot and are also packed with slow releasing every so will also keep you fuller for longer.
Ingredients
2 tbsp flax mixed with 3 tbsp water and left to thicken for 5 mins (this is an egg substitute)
1 cup ground almonds
4 tbsp cacao powder
2 tbsp sweetener
4 tbsp plant milk (maybe more)
1/2 Lime Love Vegan bar chopped into small chunks 9optional but tasty)
Squeeze of half a lime
OPTIONAL TOPPING
30g white vegan chocolate (or use sugar free for no sugar)
1/2 cup coconut cream
(just the cream from a FULL FAT tin of coconut cream -NOT the water underneath the cream)
1/2 lime Love Vegan bar to sprinkle on top
Method
Prepare the flax ‘egg’
Preheat the oven to 180C and line a muffin tin with cases
When the flax has thickened simply add all of the ingredients to a bowl and mix until combined (add a little more milk if the mixture is too thick)
Fill the cake cases 3/4 full and bake for around 20 minutes or until fully cooked all the way through (insert a clean knife to check-if it comes out clean then they’re ready)
Leave to cool and prepare the optional topping
melt the chocolate and simply stir into the coconut cream
Top when the cakes are completely cool (or the topping will melt)
Sprinkle with an additional 1/2 lime Love Vegan bar foe that extra ZINGGGG
