Vegan Twix

The other day I really got a craving for a Twix after seeing somebody eating one at lunch time so, when I got home I decided to try and have a go at veganism the Twix. I was so pleased with the results. These caramel biscuit bars are chocolatey, crunchy and loaded with tasty caramel. They will take you a little while to make as you’ll first need to make a vegan shortbread base but it’s a really simple recipe and definitely worth all the hard work and the wait.



For the biscuit base:

100 g Caster sugar

200 g Vegan spread

300 g Plain flour

For the caramel filling

100 g Dates

Tablespoon of water (more if needed)

For the chocolate topping

100 g of vegan chocolate of your choice (I used dark cooking chocolate drops)

1 Tablespoon of coconut oil (melted)


Method

  • Cream the sugar and butter together and add the flour. Mix until you have a large soft ball shape.

  • Pop in the fridge for 20 minutes or so then roll and cut into 6 fingers. (you’ll have lots of biscuit dough left over to make more biscuits)

  • Bake at 180 C for around 10 minutes or until golden.

  • While the fingers are baking mix and squish the dates together using a fork (add a little water if you need) until you get a nice caramel consistency.

  • Once the biscuit base has cooked and cooled add the date caramel topping. (see photo below)

The final part is to coat in chocolate:

  • Melt the chocolate with the coconut oil and you can either coat the whole finger by dipping the finger into the bowl of melted chocolate (which is a bit messy and fiddly but worth it if you like lots of chocolate) or you can just add chocolate to the top and allow it to drip down and coat the sides.

  • Once the chocolate has been added you’ll need to wait for it to set. I waited for about an hour and allowed it to set at room temperature.

I can guarantee it’s well worth the wait and you’ll be really happy with the results and they’ll be perfect as a vegan chocolate treat but they are so delicious that non-vegans will also love them.
