Vegan Scrambled Egg

If you ever fancy fluffy scrambled egg but are searching for something a little more indulgent than using tofu then this is the recipe for you.
Before I became vegan I would eat a lot of scrambled egg and it’s a brunch that I’d really missed. I had a go at making scrambled tofu but I was still craving an eggy texture.
I happened to visit a vegan cafe one Saturday morning and ordered the ‘scrambled egg’ I thought I’d be getting tofu but instead I received a soft fluffy vegan scramble.
I quickly began searching for recipes until I found out how to make a vegan version of scrambled eggs. I realised many vegan recipes used split mung beans and as I eat a lot of beans and had them in my cupboards, I could get to work right away.
I had many unsuccessful attempts and didn’t quite have everything in I needed so I tweaked a recipe I liked and it turned out really well so I’m sticking with what worked. It’s a really simple recipe where you chuck everything into a blander, mix it up and fry it. The only thing is soaking the beans overnight so you need to do a little prep the night before.
This simple dish of vegan scrambled egg is everything you’d hope to find in scrambled egg…fluffy, yellow, filling and delicious.
You will need to soak a cup of split mung beans over night (make sure you buy the split mung bean not whole)
Ingredients
1 cup of split mung beans soaked and rinsed
1/4 teaspoon of black salt (gives a natural eggy flavour)
1/2 teaspoon of asafoetida (or onion powder)
1 teaspoon of turmeric (for a nice yellow colour)
2 tablespoons of nutritional yeast (for flavour)
1 cup of coconut milk from a tin
2 tablespoons of olive oil
Half a cup of gram flour
1 heaped teaspoon of baking powder
1 or 2 slices of your favourite bread for toasting (gluten free if required)
Method
Simply add all the ingredients to a blend and whizz up until smooth
Heat some oil in a frying pan and once its hot add a thin layer of the mixture, a little like you’re making an omelette.
Flip it over to cook on the other side and either smooch it together a little or break it up so it begins to resemble a scrambled egg look.
Serve on your favourite toast
