No Bake Healthy Vegan Millionaire Bites

I think you’re going to love these delicious little caramel bites. Not only are they quite simple to make as they are a no bake recipe but they also look really impressive and you would not believe that they are actually a healthy treat. There’s absolutely no processed sugar what-so-ever. The sweet caramel comes from dates sweetened with a little natural agave for a delicious caramel taste and texture. Filled with nuts and oats it really is a snack that will keep you fuller for longer.

I’ve suggested that the recipe makes 12 bites as that is how many my silicon mold made. The number will change depending on the size that you’re making. The sames goes for how much you use for each bite, for example, a deeper sized caramel middle will make less bites. Just have a play around and any left overs can be eaten up whilst you’re baking :)

Ingredients

Base

75g Almonds

25g Oats (use gluten free if needed)

2 Medjool dates (cut into small pieces for easier blending)

25g Melted coconut oil

Middle

175g Medjool dates

60ml Almond milk

20g Agave

75g Vegan spread

Topping

200g Melted chocolate


Method

You will need a mini muffin size silicone mold so that the bites can easily pop out as they are quite fragile and gooey. If you don’t have one then just use cake cases or the smaller petit fours cases to make bite sizes pieces.

Start with the base

  • Blitz the almonds in a processor until they are very fine and add to a mixing bowl

  • Add the oats to the food processor and blitz them until they are very fine

  • Add the almonds back into the food processor with the dates and melted coconut oil and pulse until it’s all combined.

  • Divide the mixture to the silicone mold/cases to form a crunchy base. (You want about the same depth as a cheesecake layer)

Now for the middle

  • Simply place all of the middle ingredients into a small pan and simmer over a low heat

  • Keep mixing until the dates have gone all mushy and resembles caramel, use the back of a wooden spoon to mush the dates a bit to help them soften

  • Pop a spoonful of the caramel sauce on top of the nutty bases and place into the fridge to set a little

The chocolate topping

  • Whilst the caramel is setting simply melt the chocolate by placing the chocolate in a glass bowl and place the glass bowl over a pan of simmering water. this ensures the chocolate doesn’t burn. If you’re melting it in the microwave keep checking every 30 seconds or so.

  • Add the melted chocolate to the caramel middle

  • Place the bites back into the fridge to set completely

I’d recommend keeping these bites in the fridge as the middle does go gooey at room temperature. Keep them in an airtight container and enjoy within a week or so (mine never last that long!)
