The best thing about autumn is the pumpkins! They are great to use in many recipes but also fantastic for vegan cooking because once the pumpkin has been cooked and pureed it can be a great substitute for many vegan dishes including pancakes, cakes and other bakes.
Pumpkin puree can replace an egg or it can also replace oil in cakes and bakes etc to make them healthier or you may also add a spoonful to oats, smoothies or into savoury dishes including curries, chillis or even a vegan Mac and cheese…oh lets not forget pumpkin spice latte (find the recipe by clicking here) Feel free to add a spoonful into pretty much everything everything to get an extra boost of goodness.
I’ve found the smaller pumpkins work better than the huge halloween pumpkins as they tend to be a little smoother and sweeter when you get the smaller ones. One small pumpkin will make enough for a small bowlful of puree and enough for many recipes the will only need around a tablespoon or two at a time.
This puree will stay fresh for around 3-4 days but also freezes really well too.

Method
pre heat the oven to 180C
Wash the pumpkin so it’s free from soil
Cut the pumpkin in half and remove the seeds and stringy flesh
Bake for around 40-45 minutes or until a knife will slice into the flesh with ease
Scoop out the middle and pop in the blender and blend until you have a puree ( if you don’t have a blender then the flesh will be soft enough to mash with a folk but it won’t be as smooth)
Leave to cool and use within 4 days or freeze individual portions to freeze.
