No Bake Date Flapjack

Gooey, sweet and totally delicious! These Raw flapjack will make your mornings feel better.

The best bit about them is that they are a no-bake, so no cooking required. They’re also refined sugar free with the sweetness coming from the dates, agave and our love vegan bars.

Enjoy, share or freeze for another day x


Ingredients

150g dates

50g nut butter

40g agave syrup

4 Love Vegan Caramel & Peanut Bars

4 tbsp raisins

4 tbsp chia seeds

100g oats

Few vegan chocolate drops to top


Method

  • Place the dates, nut butter and agave in a high speed food processor and pulse until smooth. You will need to scrape down the sides and may need a tbsp of water depending on how soft your dates are. add more water until you have a smooth ball of mixture

  • Add the vegan bars (reserving 1/4 bar for the topping) and pulse in the blender a few times until they are nicely crumbled

  • Add the mixture to a large mixing bowl and add the raisins, chia seeds and oats and mix until fully combined

  • Divide the mixture into individual moulds (or pour the mixture into a lined loaf/brownie tin) and smooth down using the back of a spoon

  • Crumble the remaining 1/4 of the vegan bar and scatter this as well as chocolate drops to the top of the flapjacks and gently press them into the mixture

  • Pop into the fridge to set for a couple of hours remove from the moulds or slice and enjoy with a coffee.

Keep in an air tight container for up to 5 days or freeze and leave to defrost at room temperature before eating.
