Spicy Vegan beans

You can’t beat baked beans on toast, perfect for breakfast or lunch, filling healthy and really nutritious, especially if you make your own. I love to make my own baked beans and I usually soak haricot beans and make a sauce that a little time consuming but worth it as the beans taste amazing. However, today I am sharing a simple, quick and easy recipe that also taste really good and are perfect for those days when you are short on time or when you are short on ingredients.
Ingredients
Enough bread to toast for 4-6 people, can also be gluten free if needed
2 tins of beans any variety or use mixed (I used chickpeas and butter beans)
1 tin of passata
Pinch of sugar *
Pinch of chilli flakes
Teaspoon of sea salt⠀
Teaspoon of mixed herbs
Method
Simply add all of the ingredients in to pan and simmer for around 15 minutes until the sauce has thickened. Have a taste and add more salt/sugar to your taste preference…told you it was simple!
*Ready made baked beans have a very high sugar content, I prefer the taste of mine without a lot of sugar-just enough to offset the acidity from the tomatoes. This is the beauty of making your own, you get to decide how much to use. ⠀
