Tofu scramble


You’re going to love this vegan alternative to scrambled egg

This is the easiest scramble recipe. It’s lovely on its own on your choice of toasted bread or you can also serve it with a portion of wilted spinach and some roasted tomatoes. It’s also a great addition to a vegan fry up with beans vegan sausage and bacon, mushrooms and tomatoes.

I like this as a quick lunch or to fuel up after my morning workout as it’s packed with plant protein.


Ingredients

Splash of olive oil for frying

1/2 block firm tofu, drained

1/2 tsp turmeric

Splash vegan milk

Salt and pepper to season

OPTIONAL - Drizzle of vegan sriracha mayo and a sprinkle of smoked paprika

Your choice of bread/bagel/muffin to serve.


Method

  • Add a splash of oil to a frying pan and crumble in the tofu for 5 minutes breaking it down until it resembles the look of scrambled egg

  • Now add the turmeric and a splash of plant milk and mix together.

  • Serve on a toasted bagel or muffin with any extras you fancy too.
