Vegan Chocolate Torte

This chocolate torte is a chocolate lovers dream. So rich, indulgent and elegant it really does make the perfect dessert to a dinner party. This recipe looks really impressive but you’ll be surprised at how easy it is. It’s hard to believe this recipe is made with only 6 ingredients! I always like to add a splash of alcohol for a deeper and richer taste but this is completely optional and it still tastes amazing just with the dark chocolate.
Ingredients
For the base
4 Rich Cacao and Cashew Love Vegan bars
150 g Mixed nuts
1 Tablespoon of maple syrup
For the filling
2 Tins of coconut milk (using only the cream from the top)
200 g Dark chocolate 70% cacao works really well (the higher cocoa content the richer and deeper the taste)
2 Tablespoons of maple syrup
1 shot of Amaretto or Almond Baileys (optional)
To decorate
Raspberries
Chopped nuts
To serve
Ice-cream or sorbet
Method
Blend together the Love Vegan bars and nuts
Add the maple syrup.
Add to a loose bottomed flan tin and flatten it down really well, using the back of a spoon.
Place all of the filling ingredients into a pan and gently warm over a low heat. Whisk until everything is mixed together and looks chocolatey.
Add the chocolate mixture to the base and pop into the fridge to chill over night (or at least 4 hours)
Once the filling has completely set remove from the tin and carefully pop onto a serving dish and decorate with the raspberries and chopped nuts.
Serve with vegan ice cream or raspberry sorbet and a little agave nectar or vegan caramel sauce for extra sweetness.
