Vegan Chocolate Fudge Cake

This is my ultimate chocolate fudge cake.
The actual cake is a pretty healthy version of a cake using yoghurt and nut butter for creaminess. I however like to coat mine in a calorific chocolate butter cream making it not so healthy but perfect for a treat. There is an option to use a healthier icing to cover the cake and some frostings can be made with avocado for a healthy topping, I do enjoy my cake with a butter cream so for today this is what we’ll be using.
The cake is quite dense in texture compared to my other sponge recipe which is light and fluffy. This fudge cake is totally indulgent and lovely warmed in the microwave so the icing melts and you can cover it with cream or ice-cream.
Ingredients
Dry ingredients
280g Self raising flour ( sub for buckwheat for gluten free)
75g cocoa powder
1 teaspoon salt
1 teaspoon baking powder
270g caster sugar
Wet ingredients
160g natural vegan yogurt
135g almond butter
1 1/2 teaspoons vanilla essence
375ml nut milk (or water)
Butter icing ingredients
55g vegan spread
1 tablespoon vegan milk
200g icing sugar
30g cocoa powder
To decorate
Few chunks of vegan chocolate (grated)
1 bag of Love Vegan Heart Bites
Method
Sift flour. coco powder, baking powder, salt and sugar into a bowl
In a separate bowl whisk almond butter and yogurt and then add in the vanilla and milk/water and mix.
Add the wet to the dry ingredients and combine fully.
Separate the mixture evenly into two cake tins and bake for around 25 minutes. Check that it’s cooked by inserting a knife into the middle and if it come out clean it is ready.
Leave to cool completely
Whilst cooling you can make the icing.
Simply melt 55 g of vegan butter and 1 tablespoon of vegan milk in a large bowl
Sift and add 30 g cocoa powder and 200 g of icing sugar to the melted mixture. Mix until it is lump free.
Once the 2 cakes have cooled down its time to add the icing.
Add a few spoonful’s of butter cream to one of the cakes and spread until covered.
Place the other cake on top and cover the whole cake completely.
Decorate with grated chocolate and Love Vegan Heart bites
