I have a really simple chocolate recipe that is 100% vegan and so creamy, delicious and very easy to make using only 4 or 5 ingredients. I used a silicon mold to make my chocolates as they are easy to turn out when they are set. if you don’t have any then use small petit four cases instead.

Ingredients

1 cup coconut oil (melted)

Half a cup of coconut cream (the solid cream from a tin of coconut milk and not the water under the cream)

1 cup of cacao powder.

1/4 cup xylitol natural sugar (a much healthier alternative to regular sugar)

1 packet of Love Vegan Heart Bites - you can buy yours here.

Cacao nibs (optional but give an added texture and deep chocolate flavour)

Method

  • Add the ingredients to a blender and blend until thick and fluffy.

  • Add a few cacao nibs to the bottom of the chocolate mold/mini cases

  • Half fill with the chocolate mixture and pop into the freezer for 10 minutes to harden.

  • Remove from the freezer and add a Love Vegan Heart Bite to the chocolate.

  • Top with the chocolate mixture and level off.

A mixture of fruit and nut and solid chocolate is a good choice

Place in the fridge for a couple of hours to set completely before enjoying.

The chocolate will need to be left in the fridge as the mixture can soften when left at room temperature.
