Vegan Kale Crackers

These kale crackers are carb and gluten free using nuts and kale as the base. They are everything you want in a cracker - crunchy, tasty and perfect for dipping.
Ingredients
100g curly kale
100g Brazil nuts
2 flax egg (2tbsp ground flax:5 tbsp water-see below for instructions)
2 tablespoons coconut oil
1 teaspoon salt
1 teaspoon chilli and garlic seasoning (I used a Schwartz seasoning)
Method
Preheat the oven to 180 C and line a large baking sheet with baking paper (make sure you use a flat baking sheet without any sides so you can slide the crackers off once cooked as they are very fragile)
Prepare the 2 flax eggs. In a small bowl mix 2 tablespoon of ground flax and 5 tablespoon of hot water and leave to rest for 5 minutes to become sticky and ‘egg like’.
Pop the kale into a food processor and chop until it’s fine
Add the remaining ingredients and whizz up until everything is chopped nice and fine
Pour the ingredients onto the lined baking sheet and press it down using a spatula until it’s thin enough that there’s are no gaps in between
Bake for 20 minutes then remove and slice (I find using a pizza cutter the easiest way to do this)
Place the crackers back into the oven and bake again for 15 minutes
Remove the crackers from the oven and slide the baking paper off the tray and onto a cooling rack and leave the crackers to cool and crisp for another 15 minutes
Enjoy as you would any cracker, for dipping in to smashed avocado, with some vegan cheeses or dipped into soups.
