Let's avo biscuit

Secretly heathy biscuits loaded with all the good stuff and topped with hidden avocado. I love to eat these when I want something sweet for breakfast but also want to make a healthy choice option.


Ingredients

Biscuit ingredients:

1/4 ripe banana

4 tbsp oats (GF if needed)

1 tbsp agave/maple syrup

1 tbsp cacao powder

Topping ingredients:

Half avocado

1 1/2 tbsp cacao powder

2 tbsp maple/agave syrup

1/2 tbsp coconut oil (melted)

Optional

Chocolate chips and warm nut butter to sprinkle and drizzle


Method

  • Pre-heat the oven to 180C and line a baking tray

  • Mix all of the biscuit ingredients together

  • Divide into 6 small balls

  • Place the balls onto the baking tray and flatten each one with the palm of your hand

  • Bake for around 7-10 minutes

  • Remove form the oven and allow to cool

  • Whilst the biscuits are cooling down blend the topping ingredients with a handheld blender (this won’t work in a stand blender as there is not enough ingredients for the blades to mix properly)

    ***If you don’t have a handheld blender then may together with a flow and then place the mash into a sieve and squeeze it through the sieve using the back go a spoon, into a bowl and once it’s all been pressed through give it a mix***

  • Top the biscuits with the avo topping

  • Add chocolate drops and warm nut butter drizzle if desired
