Vegan Marshmallow Fudge

This is one of my favourite snacks, it’s so moreish and really doesn’t last that long at all, so, beware you have been warned!

Compared to regular fudge that is loaded with sugar this is very healthy, so it’s okay to eat for an everyday snack…if you can just stick to 1 or 2 pieces! It’s not easy. I hope you love this as much as we do x


Ingredients

1 cup cashew nut butter

2 tbsp coconut oil (melted)

Dash of agave nectar to taste (try a tablespoon and have a taste)

100g vegan dark chocolate (melted)

1 cup vegan marshmallow


Method

  • Simply mix the cashew butter, coconut oil and agave to a smooth paste (this is the cashew nut fudge base, it will be quite thick)

  • Stir in the melted chocolate

  • Stir in the marshmallow

  • Pop into a small lined tin and chill for a couple of hours

  • Slice and enjoy
