Vegan Stuffed Dates

I have the perfect sweet stuffed date recipe, They are sweet, delicious and totally addictive. I’ve found that many stuffed dates that you can buy in the supermarkets are not vegan friendly. These stuffed dates are 100% plant based and so delicious. They also make great gifts for family and friends.
They are really simple to make and are great for snacking on when you get a sweet craving and you don’t want to reach out for processed sugary snacks.
I have three varieties that are all so delicious it’ll be difficult to pick a favourite.
Ingredients
9 medjool dates
Small jar of almond butter
1 teaspoon of vegan chocolate spread
2 teaspoons of agave nectar (or sweetener of your choice)
Handful of hazelnuts
Handful of pecans
handful of pistachios
Vegan milk or dark chocolate
Vegan white chocolate
Method
They all start with the same preparation;
Simply tear open the dates, trying your best not to tear all the way in half (so you can easily put them back together after filling).
Remove the pit in the middle.
Add the fillings (see below)
Fold the date back together
Cover with the chocolate and nut toppings
Allow to cool and set at room temperature and store in an air tight container until you’re ready to eat them.
Pecan and Dark Chocolate
The filling is simply 2 teaspoons of almond butter with a teaspoon of agave nectar to sweeten (photo 1)
Add to the date and then add a whole pecan in the middle
Close the date back together
Top with dark chocolate and a whole or chopped pecan
Hazelnut Praline
The filling is a teaspoon of vegan chocolate spread with 2 teaspoons of almond butter (photo 2)
Fill the date and top the filling with chopped hazelnuts
Close the date back together
Cover half the date with dark chocolate and top with chopped hazelnuts
Almond and Pistachio
The filling is simply 2 teaspoons of almond butter with a teaspoon of agave nectar to sweeten (photo 1)
Fill the date and close it back together
Top with vegan white chocolate and chopped pistachios.
