Bangkok Inspired Banana Fritters

You’re friends and family will love you forever if you make these! If you have children then this is the perfect treat. You can add caramel sauce and ice-cream for the ultimate sweet treat.

We discovered traditional authentic banana fritters when we were in Thailand where you could buy a big bag of them from the many street food markets around. Our favourite fritters were from a little market in the floating markets in Bangkok. We had a Thai tour guide who told us that the batter was vegan and I was so happy!

I tried many recipes to replicate the memories from Bangkok. Many bananas and several attempts later one recipe turned out absolutely delicious. I think it was down to the coconut for the texture and added flavour and the sparkling water made the batter extra crispy. I am so excited to share this with you.


Ingredients

4 bananas (I cut mine into 4 chunks per banana however choose how big you’d like the fritters to be)

125g plain flour (use GF flour if needed)

2 tbsp brown sugar

40g coconut

300ml sparkling water (you can even use flavoured water to give the fritter a subtle hit of flavour if you like)

(You will also need vegetable oil for frying)


Method

  • Whisk all of the ingredients together

  • Add enough oil to a deep frying pan or wok and heat it up.

  • Once the oil is hot you can begin to coat the bananas in the batter.

  • Simply coat the banana pieces into the batter, shake slightly to remove any clumpy bits of mixture and add the banana to the pan (you’ll know the oil is hot enough if it sizzles when the banana is placed in)

  • Fry one side of the banana for 2 minutes then very carefully turn using tongs and fry the other side for 2 minutes. Continue to fry all of the bananas, once cooked place them on some kitchen roll to dab off some oil. They will stay hot for some time and you can also add them back to the pan to warm up again if this process takes you a long time (it can be tricky at first)
