Harissa Chickpea Stew

This Moroccan inspired stew has got to be one of the easiest things to make. You wont need a great deal of ingredients either so it’s perfect to make when the fridge and cupboards are looking a bit bare! You can double the quantity as this stew freezes really well.

This stew can be served with anything. It makes a lovely dinner with crispy roasties and veggies, add rice to create more of a curry dish or serve with some flatbread to mop up all of the lovely sauce.


Ingredients

2 red onions

1 red pepper

2 garlic cloves, grated

2 tbsp harissa paste

2 tin chopped tomatoes

2 tin chickpeas


Method

  • Finely slice the onion and gently fry until the onion has completely cooked and softened.

  • Once the onion has softened add the red pepper (diced into small bites sized pieces) and continue to gently fry for about 5 minutes or so or until the red pepper begins to crisp around the edges.

  • Add the grated garlic and harissa and mix well into the onions.

  • Add the tomatoes and chickpeas and simmer for 10 minutes adding some water if the sauce begins to thicken up too much.

Serve straight away with your favourite sides (crispy roasts and veggies are lovely)
