Sausage and bean bake (with creamy mash)

This meal is loaded with healthy veggies, beans and your choice of vegan sausages (there are so many to choose from in your local supermarkets, use your favourite)

Its a really simply one pot bake and the creamy mash makes it the perfect family favourite. I hope you enjoy this warming dish of goodness.


Ingredients

8-10 vegan sausages (check gluten free if needed)

1 tin chopped tomatoes

400g tin butterbeans - drained and rinsed really well

1 tbsp chilli powder

1 stock cube

1 onion - thinly sliced

1 pepper - Sliced

1 large carrot or 4 small baby carrots (I used rainbow carrots for some nice colour) - chopped into even chunks

1 courgette

2 cloves garlic - crushed

650g potatoes


Method

  • Heat oven to 180C and dissolve the stock cube in 200mls boiled water

  • To a large casserole dish add the tomatoes, beans, chilli powder and stock and stir until combined

  • Stir in the onion, pepper, carrot, courgette and garlic

  • Add the vegan sausages into the sauce so that they are nicely nestled in

  • Bake for 25 - 30 mins until the sausages are piping hot and the veggies are soft

  • Whilst the veggies are cooking peel and boil the potatoes until they are soft

  • Mash the potatoes with some vegan spread or oil and a slash of milk, season with salt and pepper.

  • Serve the sausage bake with a generous portion of mash and any extra veggies you like
