Banana & Peanut Butter Brownies

This healthier version of a brownie is made using oats instead of flour to make them extra nutritious and leave you feeling fuller for longer. Oats are a great slow releasing carbohydrate and will not cause a huge sugar spike so you will feel satisfied after finishing these.
The sugar is from a combination of date and banana with only 3 tbsp of coconut sugar for the whole bake. This really is one of my favourite recipes yet.
As it’s made with oats is technically a breakfast too if you serve it with natural yoghurt and fruits to make it substantial enough to keep you going until your next meal.
Ingredients
2 tbsp flax mixed with 6 tbsp of water and left to thicken for 5 mins (this is the egg substitute and will bind everything together)
120g dates (approx 7 large dates) covered with water and soaked for 5 mins before draining (to soften)
145g mashed banana (approx 2 bananas)
125ml plant milk (1/2 cup)
70g peanut butter
2 tsp vanilla essence
90g ground oats (oat flour)
30g cacao powder
3 tbsp coconut sugar (or caster sugar)
1 1.2 tsp baking powder
1/8 tsp salt
1 Love Vegan bar cut into small chunks
Method
Preheat the oven to 180C and line a brownie tin
Blend the flax ‘egg’, dates, banana, milk, peanut butter and vanilla until smooth
Add the remaining ingredients to the smooth mixture and gently fold together
Pour the mixture into the brownie tin and bake for 25 minutes
Allow to cool in the tin for 10 minutes after baking then place on a cooling rack to cool completely
Enjoy anytime you fancy a sweet treat or serve with some fruit and yogurt for a tasty breakfast.
