Coconut 'Bounty' Bars

If like me you find yourself craving a chocolate bar then my take on a ‘bounty’ bar might just do the job to curb those cravings. This bar is healthier than regular chocolate bars and is sweetened with sugar free syrup (or you could use maple/agave syrup instead) I hope you love them as much as I do! Jen x


Ingredients

4 cups unsweetened shredded coconut (I used a 250g bag)

1/2 cup coconut oil (melted)

1/2 cup liquid sweetener (agave, maple, or sugar free syrup)

Cream from the top of 1 tin of full fat coconut milk (not the coconut water underneath - see photo below)

2-3 cups dairy free chocolate to coat ( you choose how much, either a full coating or just a drizzle)

Method

  • To a bowl add of half the coconut with the oil, sweetener and coconut cream

  • Mix it together until smooth then add the other 2 cups of coconut and stir again

  • Place the coconut mixture into chocolate bar moulds or place the lot into a lined brownie sized tin

  • Place in the fridge to harden for a few hours

  • Melt the chocolate and cover how you choose, either a whole covering or just a drizzle.

  • Place back into the fridge to set before enjoying.
