Chocolate Covered Almond & Coconut Balls

These little chocolate covered coconut balls have a delicious almond nut-butter centre making them even more tasty. They are perfect to enjoy with a nice cup of tea for an afternoon pick-me-up or whenever sweet cravings are calling! As they are fat based - lots of coconut cream, nut butter and coconut - they will keep cravings at bay and will keep you feeling fuller for longer.
I have made these using a sugar free maple syrup as I wanted a healthy treat but please feel free to use agave/maple/fruit syrup as a substitute. They may result in a sweeter bar, but they will still be delicious, just be aware that if you use traditional maple syrup the coconut bar may look a little darker in colour and you may not achieve that classic bright white coconut colour.
Ingredients
2 cups shredded coconut
1/4 cup melted coconut oil
1/4 cup sugar free maple syrup
1/2 cream from a tin of full fat coconut (around 1 BIG spoonful)
Approx. 10 tsp nut butter (1/2 tsp per ball) Add more or less to suit your taste
1 cup vegan chocolate for coating (optional - you may leave them as they are or also you can roll them in coconut or nuts)
Method
To a bowl add the shredded coconut, oil, sweetener and coconut cream
Mix it together until smooth
Place the coconut mixture the fridge to harden for an hour
Once the mixture is firm, roll into balls, carefully separate each ball but keeping the bases still together so it is not fully separated
Create a small well in each half using your fingers and add 1/2 tsp almond butter into the centre of the ball pushing the nut butter as far as it can go
Re-roll the ball back together again
Once you have finished rolling all of the balls place them in the freezer and prepare your chocolate
Melt the chocolate however you choose (microwave on in a bowl over a pan of simmering water)
Remove the balls from the freezer and using two forks hold the ball between the forks and dip into the chocolate
Place the balls on a plate/tray and back into the fridge to set
Enjoy once the chocolate had hardened
Keep them in the fridge as they will melt at room temperature
