Almond and Coconut Sweet Treats

These little bites of goodness are perfect to enjoy as a snack, on the go or pre/post exercise. Often referred to as fat bombs or keto balls they are high in fats and low in carbs and packed with healthy ingredients. They are great for curbing that sweet craving and keep you fuller for longer.

They are made using coconut flour which is known for soaking up liquid and is not often used in baking as it’s very drying. It is however high in good healthy fats and low in carbs as well as being gluten free, making it perfect for these little bites.

Don’t be tempted to add more coconut flour as the bites will be too dry. Even if they seen a bit sticky the moisture will be absorbed by the flour.


Ingredients

1 cup almond butter

1/4 cup coconut four

1/4 cup agave

To coat the fat bombs

1 cup vegan chocolate chips melted with 1 teaspoon of coconut oil.


Method

  • Mix all of the ingredients apart from he chocolate and coconut oil in a mixing bowl and mix until it’s all combined

  • If it’s too crumbly (this may happen if your almond butter is very thick) add a couple of tablespoons of plant milk to combine

  • Roll into 14 small balls and pop in the fridge whilst you prepare the topping

  • Melt the chocolate and coconut oil in a bowl

  • Once it’s fully melted coat the balls with the chocolate. I find the easiest and cleanest way is to use two forks and dip each ball one at a time into the chocolate

  • Leave the balls to drip on a wire rack before placing them into the fridge to set

Enjoy these within a week of making them and keep them in the fridge to keep them fresh. I’m not sure if they freeze well so if you have any tips then please let me know :)
