Breakfast Blondies

These protein packed super blondies are made with a very special ingredient..chickpeas! They are the superstar ingredient of the blondie show, making them technically a breakfast that tastes like a dessert - my kind of morning. Enjoy with a nice latte for that at home cafe feeling.
Ingredients
1 x 400g chickpeas - drained and rinsed, keeping 2 tbsp of the chickpea water (save the rest to make meringues)
125g smooth almond butter
2 tbsp chickpea water
2 tsp vanilla extract
1/4 cup stevia or any other sugar - coconut, caster or sweetener
85ml plant milk
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp bicarbonate of soda
60g dark chocolate chips
2 x Love Vegan Bars chopped into small chunks
Method
Preheat the oven to 180C and line a brownie tin with baking paper
Place the chickpeas and chickpea water into a blender and pulse a few times
Add the almond butter, sweetener, vanilla, milk, salt, baking powder, bicarbonate of soda and blend until completely smooth. (You may need to scrape down the sides and re-blend to make sure all of the chickpeas are completely smooth)
Add the chocolate chips and Love Vegan bars and stir them in until evenly combined
Add The mixture to the lined tin and bake for around 15 minutes
Remove from the oven and allow to cool a little before adding an optional drizzle of almond butter or date syrup or any of your favourite drizzle
Slice and enjoy
