Spicy chilli bake with crème fraiche mash

This is a really nice comfort food dish. The crème fraiche mash really complements the spicy chilli resulting in a great dish the whole family can enjoy.


Ingredients

1 packet vegan mince

1 tin red kidney beans

1 x chilli sauce either a jar or homemade (find my homemade sauce here and add 1 tbsp chilli powder)

1 large bag potatoes (or enough for your family)

1 x 200ml pot vegan crème fraiche

100g vegan grated cheese

2 tbsp nutritional yeast


Method

  • Fry the mince until golden

  • Add your chosen chilli sauce and kidney beans and simmer for around 20 minutes

  • Whist the chilli is simmering, peel and boil the potatoes until soft

  • Mash the potatoes, add the crème fraiche and vegan cheese and stir until combined, season with salt and pepper

  • Place the chilli into an oven proof dish and top with the mash

  • Sprinkle with the nutritional yeast

  • Bake at 180C for around 20 minutes or until the top is nice and golden

  • Serve with your favourite veggies
