Chocolate and Caramel French Toast Rolls

Take your French toast to the next level with these delicious rolls filled with your favourite sweet fillings. I like to add a layer of vegan chocolate spread followed by nut butter and a crumbling of our Love Vegan by Jennifer bars. I really hope you enjoy making these - they are so fun to make :)
The French toast batter will make enough to soak and fry around 8 rolls of bread - so about 4 people.
If you don’t need this much the batter will keep in the fridge for a few days so you can enjoy more French toast without any hassle whatsoever (It will become thicker so you may need to add a drop of milk before using it)
Ingredients
2 slices of wholemeal bread (crusts removed) per person
The batter mix
125ml plant milk
1 tbsp cornflour (to thicken)
1 tbsp ground flax (vegan ‘egg’ replacer)
1 tbsp nut butter (I use almond as it is quite neutral tasting)
The fillings
Vegan chocolate spread
Nut butter
1/4 Love Vegan bar per slice of bread
To top
Melted nut butter, maple syrup or any other sweet drizzle you enjoy
Method
Prep your bread by removing the crusts and rolling each slice to flatten it down and to make sure it doesn’t absorb too much liquid and become too soggy.
Place all of the batter mix into a small bowl or dish
Whisk together until you have a smooth liquid
Spread each slice of bread with a thin layer of chocolate spread, nut butter and crumble on the love vegan bar
Roll the bread up tightly into a log shape and press down lightly along the fold so to stays in place.
Repeat for as many rolls as you need
Add a small amount of oil to a frying pan
Quickly dip each roll into the mixture ensuring all of the roll is covered
Lightly fry the rolls ensuring you turn so all of the sides become nice and golden.
You may find if you flip the rolls too much the bater will come off so only turn as much as you need to, to prevent burning.
Once golden add the rolls to a small plate and drizzle with your favourite sauce.
