Give your meal a burst of colour with this hearty veggie mash. Full of so much goodness with nothing added but some Himalayan salt and cracked pepper corns.
This is a perfect addition to your Sunday roast or top it over a vegan cottage pie for a nice change, it’s so versatile that it will go with almost anything - in particular classic comfort food dishes. I hope you enjoy :)
Ingredients
1 swede
2 carrots
2 parsnips
Himalayan salt or sea sat and black pepper to season
Method
Dice all of the ingredients into small chunks that resemble a similar size
Boil for 25 minutes
Drain and mash
Add a good pinch of salt and pepper and serve
