Raw 'Nutella' Brownies

I love any raw baking recipes as they are so easy to make and usually so much healthier too. These little gooey bites will not disappoint, squishy, chocolatey with that classic hazelnut flavour. You also have the option to add another layer of delicious chocolate frosting on top to make it extra chocolatey…and it’s actually full of goodness too. Raw bites never tasted so good!

You will get the classic hazelnut(Ella) taste from the hazelnuts and the creaminess from the cashews, they work so well together.

I’ve added some super foods (they are a super food powder) Not only are they delicious but have many health benefits too, they are not essential and can be left out if you don’t have them in.


Ingredients

Raw Brownie Ingredients

1 large cup of dates (I used 10 very big dates)

1/2 cup hazlenuts - blended to a very fine consistency

1/2 cup cashew nuts- blended to a very fine consistency

1 Love Vegan By Jennifer bar - any flavour -blended to a fine consistency (or add another handful of nuts and 1 extra date)

6 tbsp cacao

1 tsp vanilla essence

2 tbsp coconut flour

1 tbsp ground flax

1 tbsp water

OPTIONAL SUPERFOODS (If not using then add another 2 tbsp coconut flour)

1 tbsp lucuma powder - High in antioxidants and full of fibre

1 tbsp maca powder - Good for stamina and energy and full of vitamins

Optional Healthy Frosting

1/4 cup cashew nut butter (I recommend cashew as it is mild in flavour you could sub for almond or peanut but the flavour will be more prominent)

2 tbsp agave/maple syrup

3 tbsp cacao powder

1 tsp vanilla essence/paste

2 tbsp plant milk

To Top

1 square of vegan chocolate grated


Method

  • Line a brownie tin with baking paper

  • Place all of the Raw Brownie ingredients list to a high speed blender and blend several times, scraping down the sides and re-blending as you go, until you have a thick but smooth ball

  • Place the ball of raw mixture into the prepared tin and place another sheet of baking paper on top. (To prevent sticking)

  • Now use the back of a spoon to squish the mixture down until it has filled the tin and is nice and level.

  • Place in the fridge to set and if you like make the healthy frosting

Healthy Frosting

  • Place all of the frosting ingredients into a large bowl and stir together until combined.

  • You may need to use a handheld whisk to blend completely and remove any lumps, this depends on how smooth your nut butter is.

  • Whisk if required until smooth

  • Add an extra tbsp of plant milk if it’s too thick

  • Add an additional tbsp of syrup if you like it a little sweeter

  • Once the frosting is to your liking add the frosting to the top of the raw brownie mixture and smooth down with the back a spoon.

  • Add optional chocolate sprinkles
