Breakfast Burritos

These burritos are perfect for anyone who loves something savoury in the mornings or for brunch. Vegan foods are becoming more easily available and the meat alternatives are getting tastier each year. We’re so lucky in the UK to have readily available meat substitutes, that even taste good to those who don’t follow a plant based diet. Everyone will love these burritos


Ingredients

2 vegan ‘sausages’

1 red pepper, sliced

Handful of cherry tomatoes

1 portion of vegan scramble; 4 tbsp chickpea flour, 60ml vegan milk, 1/2 tsp baking powder, 1 tabs nutritional yeast, pinch black salt (kala namak)

2 rashers of vegan ‘bacon’

2 large handfuls of spinach

1 avocado, sliced

1 slice of vegan cheese

2 tortilla wraps

Sauce of choice to drizzle - tomato, chilli, vegan mayo etc


Method

  • Start by frying the sausages and red pepper for around 4-5 minutes

  • Add the tomatoes and fry for another minute

  • Add the vegan scramble to the pan and fry for a minute (as you would an omelette)

  • Flip the vegan scramble and tear apart to form small pieces (see photo)

  • Add the vegan bacon and cook on each side for a minute or so

  • Add the spinach and allow to wilt down

  • Slice the sausages and divide the mixture evenly between the 2 tortilla wraps

  • Add the avocado slices and vegan cheese

  • Roll the wrap and toast on each side using a griddle, to make pretty patterns, or pop it back in the frying pan until golden on both sides
