Fruity Breakfast Muffins


The perfect sweet muffin to enjoy with your morning coffee. Simple, delicious and they’re also vegan and gluten free too!

I like to make these at the weekend for a tasty breakfast with lots left over for snacks for the next few days too. They’re lovely on their own or with some vegan yogurt, berries and a drizzle of my special dandelion vegan honey :)


Ingredients

Dry ingredients

200g buckwheat flour

100g oat flour (oats blended until fine)

100g soft brown sugar

2 tsp baking powder

pinch salt

Wet ingredients

125ml plant milk

30mls vegetable/rapeseed iol

1tsp vanilla extract

Fruity bits

1/2 carrot, grated

1/2 apple cored and diced

200g raspberries


Method

  • Add the dry ingrdients to large mixing bowl and leave to one side

  • Add the wet ingredients to a jug and stir.

  • Add the wet liquid to the dry ingredients and stir until combined

  • Add the carrot, apple and raspberries and gently fold them in

  • Add the mixture to the muffin cases and sprinkle on a few oats and a little brown sugar for a nice extra and to make them look even more delicious.

  • Bake for 30 minutes or until the top is golden brown and the muffins are cooked all the way through. Check by inserting a small knife into the middle of a muffin, if to comes out clean then it’s cooked all the way through. If not bake for another 5 minutes.
