Carrot cake waffles

These waffles are not only really healthy but they are so tasty too. I like to serve mine with some fresh fruit and a yoghurt based carrot cake topping.

This recipe is a single serve recipe so it’s perfect to use if you’re the only vegan in your household or if you’re just making this for yourself. You can double the recipe to make more too :)

You’ll need a waffle maker to make these, I picked one up on-line and I haven’t been disappointed with it at all. In fact I use it quite a lot - for sweet breakfast and desserts but i’ve also made savoury waffles and also sweet waffles with crispy fried tofu and caramel sauce for that American classic weekend treat. Ingredients

40g grated carrot - cooked for 1 minute in the microwave

40g oat flour - blended oats until you get a fine powder

1 tbsp sugar

1/4 tsp baking powder

1 tbsp raisins (10g)

1 tbsp vegan yoghurt

2 tbsp plant milk

Creamy topping

1 large spoonful of vegan yoghurt mixed with 1/2 scoop vanilla protein powder


Method

  • Soften the carrots by cooking them in the microwave for 1 minute, remove and squeeze out any liquid.

  • Add the rest of the waffle ingredients and stir until combined

  • Spray the waffle maker with some oil and pour the mixture into the waffle maker

  • Cook according to the instruction but it usually takes around 5 minutes or until the waffles are just golden and firm to touch

  • Whilst the waffles are cooking make the topping by mixing the vegan yoghurt with protein powder until the mixture resembles the consistency of thick cream. If you don’t have protein powder then just use vegan yoghurt

  • Once the waffles are ready serve with some fresh fruit and the creamy topping.

Double the recipe for a larger portion or for 2 to share
