Cucumber & Tahini Dressing

This dip is the perfect accompaniment to many dishes. Great for simply dipping or to spread in wraps or to have as a side or to drizzle over a main courses such as falafels. Click here for an amazing falafel recipe
This dip can be whipped up in 5 minutes using only 6 ingredients and 1 bowl..simple! If you fancy making some fresh bread to dip into this then check this flat bread out
Ingredients
1/2 cucumber finely diced
60g natural vegan yogurt or creme fraiche
25g tahini
1 tbsp water
Squeeze of lemon juice
1/2 - 1 crushed garlic clove (depending on your taste)
Salt and pepper to taste
Method
Carefully squeeze the water from the cucumber by placing the diced cucumber cubes into a clean tea towel and very gently squeezing the liquid out
In a small bowl mix together all of the other ingredients
Add the cucumber and mix them in until fully combined
have a taste and season with salt and pepper if you like
Ready to serve straight away or to will keep fresh in the fridge for a couple of days
