Easy Vegan Chocolate Cake

Everyone loves a good chocolate cake and this one will not disappoint. It’s as always, 100% plant based but you would never know. It’s so light and fluffy and absolutely scrumptious! Perfect for a special occasion or to share with family and friends. TRUST ME you have to try this recipe.


Ingredients

Dry Ingredients

300g self-raising flour

200g caster sugar

4 tbsp cocoa powder

1 tsp baking powder

Wet Ingredients

150g rapeseed oil

300ml plant based milk

1 tbsp apple cider vinegar

Buttercream

100g vegan spread

200g icing sugar

2 tbsp cocoa powder

50g melted vegan chocolate

1 tbsp plant based milk

To decorate

Berries

Vegan chocolate drops


Method

  • Heat oven to 180C and line 2 x sandwich tins with baking paper.

  • Pop all of the wet ingredients into a jug or bowl and mix together, the liquid will curdle/split but this is okay.

  • Sift the dry ingredients into a mixing bowl.

  • Add the wet ingredients to the dry ingredients and stir together until combined (DON’T OVER MIX)

  • Divide the mixture between the 2 lined sandwich tins and tap the tins on the work surface - this levels the mixture out but, more importantly, prevents the baking powder from activating until it’s in the oven, producing a lighter bake.

  • Bake for around 25 minutes or until just browning - or until a skewer/knife comes out clean when inserted.

  • Leave to cool completely on a wire rack.

  • Now it’s time to make the butter cream

  • Sift the icing sugar & cacao to remove any lumps

  • Add the vegan spread to the sifted icing sugar and cacao powder and beat using a wooden spoon until smooth (or you may wish to use an electric whisk).

  • Add the melted chocolate and plant milk.

  • Divide the mixture and smooth half for the middle and half for the top of the cake.

  • Decorate with berries and vegan chocolate drops.
