Easy Vegan Chocolate Cake

Everyone loves a good chocolate cake and this one will not disappoint. It’s as always, 100% plant based but you would never know. It’s so light and fluffy and absolutely scrumptious! Perfect for a special occasion or to share with family and friends. TRUST ME you have to try this recipe.
Ingredients
Dry Ingredients
300g self-raising flour
200g caster sugar
4 tbsp cocoa powder
1 tsp baking powder
Wet Ingredients
150g rapeseed oil
300ml plant based milk
1 tbsp apple cider vinegar
Buttercream
100g vegan spread
200g icing sugar
2 tbsp cocoa powder
50g melted vegan chocolate
1 tbsp plant based milk
To decorate
Berries
Vegan chocolate drops
Method
Heat oven to 180C and line 2 x sandwich tins with baking paper.
Pop all of the wet ingredients into a jug or bowl and mix together, the liquid will curdle/split but this is okay.
Sift the dry ingredients into a mixing bowl.
Add the wet ingredients to the dry ingredients and stir together until combined (DON’T OVER MIX)
Divide the mixture between the 2 lined sandwich tins and tap the tins on the work surface - this levels the mixture out but, more importantly, prevents the baking powder from activating until it’s in the oven, producing a lighter bake.
Bake for around 25 minutes or until just browning - or until a skewer/knife comes out clean when inserted.
Leave to cool completely on a wire rack.
Now it’s time to make the butter cream
Sift the icing sugar & cacao to remove any lumps
Add the vegan spread to the sifted icing sugar and cacao powder and beat using a wooden spoon until smooth (or you may wish to use an electric whisk).
Add the melted chocolate and plant milk.
Divide the mixture and smooth half for the middle and half for the top of the cake.
Decorate with berries and vegan chocolate drops.
