Easy butterfly cup cakes
Soft, fluffy and delicious…super easy to make too. These cute butterfly cakes are the perfect treat for you to share with family & friends!

I have a treat in store for all cake lovers, fluffy vegan cupcakes topped with the most delicious and creamy buttercream. Super easy to make, only one bowl and 7 ingredients needed.
They are perfect to take to a party, can be adapted to suit any occasion and the sponge can also be used to make a whole cake as well.
Ingredients
Sponge ingredients
300ml dairy free milk
1tbsp apple cider vinegar
150g vegan spread (softened)
300g self-raising flour
200g caster sugar
2 tbsp golden syrup
1 teaspoon of baking powder
For the filling
Jam (optional)
200g icing sugar
100g vegan spread
Method
Preheat the oven to 180 C and prepare a muffin tin with 12 muffin cases
Add the milk and apple cider vinegar to a small jug and stir
Add all the other sponge ingredients to a large mixing bowl, add the milk mixture and beat together until smooth
Only mix until it’s all combined, if you over mix the cake may not rise properly
Divide the cake mixture into the muffin cases. Only fill about 3/4 full as they will rise a lot
Bake for about 20 minutes or until the cakes are nicely golden and fully cooked all the way through.
For the buttercream:
Whilst the cakes are cooking cream together the icing sugar and vegan spread until smooth
Leave to one side until the cakes have cooled down completely.
Once cool simple cut out a little hole in the centre of the cupcake. Once you made a hole you’ll be left with a small piece of cake (the top of the cake you just cut out)
Cut that piece in half (ready to pop back onto the cake after decoration).
Add a teaspoon of jam to the bottom of the hole and spoon a large spoonful of icing to cover the whole top of the cup cake.
You can also use the sponge recipe to make a whole sponge cake by dividing the mixture into 2 cake tins that have been lined with baking paper and cook for around 20 minutes or until golden.
