Falafel and Roasted Veggie Toastie

It’s sometimes difficult to think about what to put into a vegan sandwich, I don’t think you can go wrong with good old falafels and roasted veggies. This is a great way to use up your left overs or what you have in the freezer for a quick and easy lunch. If you’re making this from scratch then it’ll take you a little longer to make the falafels or if you like you can use shop bought (double check they’re vegan) or do as I do and love your leftovers.
If you love baking and cooking then why not make your own bread? This is perfect with my homemade rye bread recipe, white bread or flatbread
Ingredients
8 falafels - for homemade find the recipe HERE and add another 30 minutes on to the cooking time
1 courgette
1 red pepper
Half a red onion
4 slices of bread (can be gluten free)
Plant based spread (I use flora)
2 slices of shop bought vegan cheese (I use violife)
Rocket leaves
Drizzle of tahini or tahini dip
Method
Preheat the oven to 180 C
If you’re making falafels from scratch then make these first and pop them in the oven at the same time as the veggies (see below)
Finely slice the onion, courgette and pepper and drizzle them with some olive oil and salt and pepper and bake for around 15-20 minutes or until they are golden
If you have a toastie maker then you will use this if not you will need to gently toast/fry the bread in a large frying pan
You will need to butter each slice of bread and the butter side will need to be on the OUTSIDE of the sandwich, this will add flavour and crunch to the toastie
Start by putting the bread butter side down into the toastie maker or frying pan.
Build your toastie by adding the rocket leaves followed by the roasted veggies, then the falafels (squish then down a bit)
Next add the tahini and top it all off with the vegan cheese.
Now add the other slice of bread (butter side facing up this time)
Cook in the toastie maker for around 5 minutes or according to the instructions or if you’re frying then simply fry over a medium heat for a couple of minutes each side.
