I think you’re going to love these little cups of deliciousness! They are a high protein sweet treat made using our very own high protein love vegan bars so make sure you have a supply if you want to make these, trust me you’’ll definitely want to try them as they are; sweet, delicious, moreish, easy and better than shop bought.
The filling is a homemade recipe for a delicious peanut butter and maple dip. If you like you can always just use a jar of peanut butter, however the homemade version is better as it’s sweeter and more runny. Find the recipe for Jens’ peanut and maple dip HERE
Ingredients
Base
1 high protein love vegan bar (reserving a little to sprinkle on top-just the end bit)
1/4 cup oats, can be gluten free if needed
4 teaspoons melted coconut oil
Middle
6 teaspoons of Jens’ peanut butter and maple dip
Top
30g dairy free chocolate (I used a free from chocolate bunny that I had left from Easter from hotelchocolat)
1/2 teaspoon coconut oil
Method
Start with the base
Simply place the base ingredients into a food processor and whizz up until blended and fully combined.
Press firmly into 6 moulds or small cake cases
Add a teaspoon of Jens’ peanut and maple dip into the base layer
Melt the chocolate and coconut oil and pop it over the middle layer
Sprinkle with the remaining Love Vegan bar for decoration and chill for an hour or so in the fridge.
