Grown-up double chocolate krispie cakes

Who said Krispie cakes are only for children’s parties? Grown-ups prepare to be blown away with these simple Krispie treats for a little old school nostalgia


Ingredients

125g peanut butter

2 tbsp maple syrup

2 tbsp chia seeds

60g coconut oil

2 tbsp golden syrup

160g chocolate puffed rice (or use plain puffed rice)

To top

Handful of small chocolate chips

Icing drizzle (mix a large spoon of icing sugar with a little hot water until smooth - thick and runny will achieve the best results)


Method

  • Line a brownie tin with baking paper

  • Melt all of the above in a small saucepan until warm and combined

  • Leave to one side for 5 minutes to cool and for the chia seeds to have some time to become soft and gooey

  • Pour the syrup over the puffed rice and carefully mix until all the puffed rice is combined. You may choose to use lass puffed rice for a stickier Krispie cake.

  • Pour the Krispie cake mixture into the brownie tin and carefully press down until all of the puffed rice is neatly compact into the tin, making it more stable.

  • Top with choc chips and softy press them down using the back a spoon

  • Leave in the fridge to chill for about an hour

  • Once set you have the option to drizzle with icing, leaving it to set for 10 minutes or so
