Healthy Oaty Protein Bars

My best protein snack has got to be our love vegan high protein bars. They are available in three delicious flavours and have up to 10.1g of protein per bar which is amazing. However, if you can’t get your hands on them then this is the next best thing, there is not as much protein in the homemade version but they are still super tasty and will keep you going for a while before you feel hungry again. If we don’t have any Love Vegan protein bites at home then I like to make these at the weekend so we always have a go-to snack to keep hunger pangs at bay. Made with only 5 ingredients and one bowl they are quick and easy to make.
Ingredients
2 tablespoons coconut oil
1/4 cup maple syrup
1 cup nut butter (any nut butter will work)
1 scoop of protein powder (I use my protein For gluten intolerance just double check that the flavour you buy is GF)
4 cups gluten free oats (or regular if not GF)
Optional: 1 cup chocolate chips
Method
Prepare a brownie sized tin with baking paper
In a large mixing bowl add and melt the coconut oil
Add the maple syrup and nut butter and stir until combined to a thick liquid
Add the protein powder and oats stir well until fully combined
If the mixture is too thick simply add a touch more coconut oil until you reach the desired consistency. The consistency will vary depending on how oily your nut butter is.
Pour the ingredients into the lined tin and press down really well with the back of a spoon
Chill for a couple of hours in the fridge
If you have decided to add chocolate to the top simply melt the chocolate and smooth it over the protein bars
Keep the bars in an air tight container and enjoy within a week of making them
