Black bean burgers with a tahini and avocado smash topping

These delicious black bean burgers are so tasty and you don’t need to be vegan to enjoy them. I’ve tried and tested this recipe with many of my meat eating friends and they all love them. They are perfect for a mid-week treat or to enjoy at the weekend in the garden in the summer time.

They are a little drier and more delicate than shop bought bean burgers, that tend to be a little mushy inside, these can be a little crumbly so take extra care when flipping them over. Topping these burgers with the avo smash is the best way to complement them, as you get the soft texture from the smash. You can whip these up in less than an hour from start to finish, what are you waiting for?


Ingredients

2 tins black beans

1 red chilli - seeded and finely sliced

1 crushed garlic clove

3 spring onions

50g fresh coriander

50g breadcrumbs (can use GF breadcrumbs)

For the avocado smash

1 ripe avocado

1 lime (the juice of half)

1 tablespoon tahini

To top

2 tablespoons natural unsweetened vegan yogurt

Tomato, lettuce or other salad of your choice

4 bread rolls (can be GF)


Method

  • Mash the beans in a large bowl

  • Mix in the chill, spring onion, crushed garlic, coriander and bread crumbs until combined

  • roll and flatten into round burger shapes

  • Fry or griddle the burgers for 5 minutes each side with a little splash of olive oil to prevent sticking (they will stick and go crumbly without any oil to help) or pop them in the oven 180C for around 15 minutes

  • Whilst the burgers are cooking mash the avocado, lime juice, tahini and salt together.

  • Once the burgers are cooked load them up with salad and the avocado smash and pop dollop of natural yogurt on top of the avocado smash

  • Serve with wedges or chips and a side salad
