Key Lime Pie Cheese Cake

Sharing is caring so this cheese cake recipe for two is perfect to share with your best friend or loved one! It also tastes pretty good too…you’ll need 3 of our zingy love vegan bars to make this, details on hoe to but them are detailed below, hope you enjoy x

Ingredients

Base

2 x Love Vegan Lime bars

1/4 cup ground almonds

1tsp coconut oil

Filling

75g vegan cream cheese

2 tbsp agave/ maple syrup

1/4 cup vegan DOUBLE cream (you must get the double cream so it can be whisked up)

Zest and juice of half a lime (zest the lime first as its a bit easier when you zest a whole lime)

Additional 1/4 Lime vegan bar and zest of 1/2 lime


Method

  • Add the vegan bars, almonds and coconut oil to a food processor and blend until combined

  • Press the base firmly into 2 individual tart tins

  • Mix the cream cheese and syrup together until smooth and lump free

  • Add the double cream and whisk until nice and thick

  • Add the lime juice and zest and mix it in ( have a taste to see if its sweet enough, if you like add although more syrup)

  • Add the filling to the base

  • Crumble on the extra vegan bar and zest

  • Leave to set for a few hours or even better over night


Allow the sponges to cool completely before adding the creme fraiche frosting
